Tasty tacos with Jackfruit Pieces

INGREDIENTS (Serves 2 persons)

  • 160 grams Rootzz of Nature jackfruit pieces
  • 1 onion
  • 2 red peppers
  • 400 grams diced tomatoes (from a can)
  • 125 grams sour cream
  • 200 grams corn (from a can)
  • 200 grams kidney beans (from a can)
  • 8 tortillas
  • pinch of salt
  • olive oil
  • guacamole
  • A sprig of parsley


StEp 1

Peel and finely chop the onion. Fry in olive oil. Dice the peppers into cubes and add them to the onions. Lastly, add the jackfruit pieces and the spices and fry it.

StEp 2

Rinse the corn and kidney beans under the tap and drain well. Add these together with the diced tomatoes to the jackfruit. Let this mixture simmer for about 5-10 minutes.

StEp 3

Heat the tacos in a dry frying pan or in the oven. Fill them with a generous spoonful of the jackfruit mixture. Garnish the jackfruit tacos with guacamole, sour cream and parsley.
