Stew with Jackfruit

INGREDIENTS (Serves 2 persons)

  • 300 grams of Rootzz of Nature Jackfruit Original
  • 4 shallots
  • ½ winter carrot
  • 2 stalks of celery
  • 400 ml vegetable stock
  • 100 ml balsamic vinegar
  • 5 tbsp of apple syrup
  • 2 slices of gingerbread
  • 2 bay leaves
  • 2 cloves
  • 5 sprigs of thyme
  • 1 sprig of rosemary
  • 1 cinnamon stick
  • 2 tbsp of olive oil
  • salt and pepper
  •  

PREPARATION (30 min. + 30 min. waiting time)

StEp 1

Rinse the jackfruit under the tap and drain well in a colander. Cut the shallots into rings and cut the carrot and celery into slices. Heat the oil in a frying pan and gently fry the shallots with the carrot and celery. Add the jackfruit and let it bake for a while. Add the vinegar and let it reduce to half.

StEp 2

Then add the stock, along with the bay leaf, cloves, rosemary and the cinnamon stick. Bring to boiling. Turn the heat low and let the stew simmer gently, until half of the liquid has reduced. This takes about half an hour.

StEp 3

Remove the herbs and stir the apple syrup through the sauce until everything is dissolved. Crumble the gingerbread over the pan. Stir until it has fallen apart and the sauce starts to thicken. If the jackfruit has not completely fallen apart yet, you can pull it apart with two forks.
