Spicy noodles with jackfruit

INGREDIENTS (Serves 2-3 persons)

  • 300 gram Rootzz of Nature Jackfruit Original
  • 2 tablespoons of sesame oil
  • 60 ml of soy sauce
  • 1-2 tablespoons of chili garlic sauce
  • 1 teaspoon of ginger powder
  • 1 clove of garlic, chopped
  • 3 tablespoons of vegetable stock or water

Sauce:

  • 2-4 tablespoons of chili garlic sauce, to taste
  • 2 tablespoons of soy sauce
  • 3 tablespoons of sesame oil
  • 2 cloves of garlic, chopped
  • Juice of a ½ lime
  • 2-3 teaspoons of freshly grated ginger
  • 3 tablespoons of tamarind paste
  • 1 teaspoon of cornstarch
  • Sriracha, if desired

Stir-fry:

  • 225 gr rice or udon noodles
  • 3 tablespoons of neutral oil
  • 1 small onion, chopped
  • 2 cloves of garlic, chopped
  • 150 gr broccoli florets
  • 1 bell pepper, cut into strips

Garnish:

  • Snack cucumber, cut into strips
  • Fresh cilantro
  • Sriracha or chili garlic sauce

PREPARATION (60 min. + 60 min. waiting time)

StEp 1

Combine all the marinade ingredients, except the jackfruit, in a shallow bowl. Stir until smooth. Taste and add some extra of the ingredients to taste if necessary. Then add the jackfruit and stir well so that the jackfruit is completely covered with the marinade. Let it rest for an hour.

StEp 2

Combine all the sauce ingredients in a bowl and stir it into a sauce. Set aside.

StEp 3

Cook the rice or udon noodles according to the package instructions.

While waiting for the noodles, heat 1 tablespoon of oil in a wok or large skillet over medium heat. Fry the jackfruit on all sides for a total of 5-6 minutes and place it in a bowl. Set aside.

StEp 4

Add the second tablespoon of oil to the wok or skillet and increase the heat slightly. Stir fry the onion for 2 minutes and then add the garlic, broccoli and bell pepper. Add 2-3 tablespoons of the prepared sauce to deglaze the pan and season the vegetables. Fry until the vegetables are golden and cooked through, then add a few more teaspoons of the sauce if desired. Save the remaining sauce. Transfer the vegetables to the bowl with the baked jackfruit.

StEp 5

Drain the cooked noodles and pour the remaining sauce over the noodles. Stir well. If there isn’t enough, add more soy sauce, sesame oil or vegetable stock, depending on your taste preferences. Heat the third tablespoon of oil in a wok or frying pan and stir-fry each portion of noodles immediately afterwards.

StEp 6

Cover each plate of noodles with 1-2 scoops of stir-fried vegetables and jackfruit. Garnish with cucumber, cilantro and sriracha or chili garlic sauce to taste.
