Indian Vegan Jackfruit Curry

INGREDIENTS (Serves 3-4)

  • 325gr Rootzz of Nature Jackfruit in Curry sauce
  • 500gr green beans
  • 2tbsp coconut oil
  • 100gr pistachios,
  • coarsely chopped
  • 2tbsp hemp seeds
  • 1 lime
  • Rice and/or naan bread


StEp 1

Cook or blanch the green beans. Then drain the green beans well. Next, heat 2tbsp of coconut oil in a frying pan and let it get very hot. Add the drained beans and stir-fry on high heat for a few minutes until nice and crispy.

StEp 2

Heat the Jackfruit Curry on low heat in some oil or heat for 15 minutes au bain marie.

StEp 3

Serve the curry with the green beans. Garnish with pistachios, hemp seeds, and wedges lime.


Serving tip: Very tasty with cooked rice and/or naan bread.
