Indian vegan Jackfruit Curry with naanbread

INGREDIENTS (Serves 3-4 persons)

  • 320 grams Rootzz of Nature Jackfruit in Curry Sauce
  • 2 large onions, chopped
  • 5 tbsp of coconut oil
  • 3 eggplant, diced 1 x 1 cm
  • 500 gr green beans
  • 250 grams pistachios, roughly chopped
  • 4 tbsp of hemp seeds
  • 1 (kaffir) lime
  • rice and/or naan bread


StEp 1

First, boil or blanch the green beans and drain well. Next, heat 2 tbsp of coconut oil in a frying pan and allow it to become very hot. Add the drained beans and stir-fry for a few minutes on high heat until nice and crispy.

StEp 2

Heat the Jackfruit Curry on low heat. Serve the curry with the green beans. Garnish with pistachios, hemp seeds and wedges of lime. Yummy, enjoy!

Serving tip: very tasty with boiled rice and/or naan bread.
